Sambusa
A yeast-risen flat bread, with a slightly spongy texture, and a slightly sour taste. Injera is made with a native Ethiopian grain called teff. Teff is high in iron, high in dietary fiber, contains protein, contains calcium, and is gluten free. A common appetizer, sambusa is a mixture of lentel beans, hot green peppers, onions, garlic, and ethiopian spice. The ingredients are stuffed into flakey triangle shaped dough and fried.
